Creamy scoops of Over The Moo rolled in crunchy Anzac Biscuits. A dessert good enough to take a day off work for.
Ingredients

1 cup oats
-
¾ cup desiccated coconut

1 cup all purpose flour

½ cup caster sugar

1 tsp bicarbonate soda
-
100 vegan butter, margarine or refined coconut oil

1 tbsp maple syrup

Three generous scoops of Over The Moo 'Vanilla Bean Missing You'
Method

Preheat the oven to 180° C.

Mix the dry ingredients in a big old mixing bowl.

Melt the butter in a small saucepan over a low heat, add the maple syrup and bicarb and stir until combined.

Add the melted butter mixture to the dry ingredients and stir gently until it is mixed well.

Roll mixture into balls with your hands, flatten each ball so that you have 1 cm high cookies, and place them on a paper lined baking tray.

Bake for 18-20 minutes until golden, wait till cool then crush into small pieces.

Scoop a ball of 'Vanilla Bean Missing You' Over The Moo.

Place your crushed Anzac Bikkies into a bowl and roll the ice cream scoop until covered. Repeat as many times as you like.
